Strawberry buns. Perfect breakfast :)



First, I want something with strawberries and it must be some kind of yeast.
Second - it must be a little more healthy than 'normal' buns.
Third - I modyfied 'cinnamon buns' recipe and it was a very good choice!

So... come on try it! :-)


This is not simply modifying 'cinnamon buns' recipe. I made "healthy" version (wholemeal flour, less oil and sugar, no eggs in dough).

Dough:
3 cups flour (1 cup wheat flour + 3 cups wholemeal flour)
1/2 tsp salt
3 tbsp sugar
1 cup milk
2 1/2 tsp yeast
1/4 cup oil or butter (melted)

The night before
Mixed together flour, salt and sugar
Add to milk yeast and stir until it dissolves
Combine flour and milk together adding oli or butter
Stir with a spoon and knead by hand for 8-10 & add more flour if it necessary. Dough should be soft & moist but not sticky
Evenly place in pan, cover with plastic wrap & let sit in fridge overnight.



The next morning:

Filling:
Strawberries (chopped)
strawberry jam (eco, without sugar)
1/2 cup silvered almonds




On a lightly floured surface, roll out dough into a 30x35 cm rectangle. Spread jam and sprinkle with strawberries and almonds. Roll into a long and cut into 12 equal pieces.


Evenly place in pan, cover with plastic wrap and let sit in warm place about 2 hours.


Oven 175 C, bake for 20-25 min until golden brown.


Frosting:
1/4 cup cream cheese, softened
2 tbs powdered sugar

Combine all frosting ingredients and drizzle over the rolls once they have slightly cooled.
