Carrots. Cream soup.

Beautiful color, delicious taste (through fresh ginger)... georgeus healthy soup :-)

1 tbsp butter
1 large onion, chopped into cubes
250g carrots, peeled & chopped into slices
1 tbsp finely grated ginger
1/2 tsp grated orange zest
300ml vegetable stock
salt and pepper

Dissolving the butter in a saucepan over low heat.
Add onions and stir for 3 min, until slightly softened
Add carrots, cover tne pan and cook for about 15 min, until slightly softened

Add ginger, orange zest and vegetable stock. Boil, reduce the heat to minimum, about 30 min, until vegetables are soft.
Take off the heat, mix with a blender to cream.
Season with salt and pepper.

So simple, so good! :-)
