Rhubarb. Strawberries. Muffins.
Cut, cut, cut... Cuts rhubarb. And thinking. About muffin photos which I'll make in a moment, about my life, which is so complicated sometimes, because I still searching what I want to do. I think my job, my future egzam... And I'm relaxed. Like when I running or biking ;-)
This muffins is a special ones. It's for my friends from "Invention Team" - so I'll take it tomorrow to my work :-)
1 1/4 cup of brown sugar with real vanilla (or if you don't have real vanilla - 2 tsp vanilla esence)
1/3 cup oil
1 egg
1 cup buttermilk
Mix together and add 1 1/2 cup rhubarb (peeled and chopped) and 1/2 cup walnuts (shelled and chopped).
In another bowl mix together: 2 cups flour (I used wholemeal), 2 tsp baking powder, 1 1/2 tsp soda and 1/2 cup wheat germ.
Next, gradually add flour mixture to buttermilk-rhubarb miksture. Mixed just to combine, not perfect. If the mass is to thick - add some buttermilk (but it must be a little thick)
Oven 200 C
Put into form - fill to half, then press the center 1 strawberry. Next cover strawberry a little dough. Repeat to another forms.
Bake 25 min (or to a dry stick)
Muffins are the best with milk or strawberry coktail (strawebrries + kefir or natural yoghurt)
Rhubarb - it's a funny word :) don't you think?
