Soba noodles. Curry. Vegetables.







Easy, fast and delicious dinner :-)


You will need:

1 tsp curry powder (you can also use the green curry paste, then gives her more)
1/3 tsp cumin powder
1/4 tsp chilli powder (or flakes)
piece of freshly grated ginger (about 1 tsp)
oil for frying
salt
1 medium onion
1 clove garlic
mix of fresh vegetables - for me: broccoli (3 cups), carrot (3 pieces), red & yellow peppers (1 each)
1 small can unsweetened coconut milk
soba noodles (prepared according to the instruction on the package)

In a deep frying pan warming up the oil, throw him cumin and chilli, stir-fry briefly until the spices bring out the flavor. Then add, into the spices, chopped onion and garlic. Lightly salt and fry until the onion is soft. Then throw vegetables (broccoli, divided into small florets, sliced ​​carrots, peppers into squares.) Briefly fry vegetables and add curry paste and ginger, cover lid. Stewing vegetables until they lose the hardness (you can add a little water.) It takes about 10-15 minutes.

Then poured into the pan coconut milk, mix thoroughly and stewing of the next quarter.

Prepared curry served with soba noodles.

Vegetable. Soup.

Cloudy today. So I need something colorful. To eat ;)

This is another easy meal which may be a series of "so simple, so good".

Vegetable soup. How to do it?
You need fresh or frozen vegetables: leek, green peas, potatoes, cauliflower, carrots, parsley-root, dill, etc. - whatever and how much you want (I like pottage). And 1 vegetable bouillon cube.

Boil 1 liter of water, put them all vegetables with vegetable bouillon cube. Cook, over low heat, until vegetables are tender (about 15 minutes). 

Season with salt and pepper to taste, I added a little soy sauce and homemade noodles (mix the egg with flour and add in a small portions at the end to the simmering soup).

Easy and simple, isn't it?

So simple, so good

Cherry tomatoes are so sweet and great to eat without anything. Finally, I decided use they as an addition to sandwiches :-) 
Great choose.

Hummus:
can of chickpeas, olive oli, lemon juice (a little), tahini, salt, garlic clove
Blend it.

Serve with: fresh good bread (for me: wholemeal) or pita; sprinkle with parsley.
